Racing for Recovery 5k

Well, I did it! I ran my first 5k! It wasn't a big challenge, either. I'd run up to 3.5 miles in my training. It was very chilly though. At the start of the race, it was 44 degrees. Brrr! But I paced myself well, and ended up finishing in 32:54, which I calculated to be somewhere around 10:36 min/mile, which was slightly better than I'd done in training. It was awesome, and I can't wait for spring so I can sign up for more races!!

My goal this winter is to use the treadmill during the week to keep up my endurance, and - as long as there isn't any treacherous snow or ice on the ground - to run outside at least once a week on the weekends. I'm so excited! Goooo me! :o)

Pumpkin Muffins

There is a recipe floating around out there for 2-ingredient pumpkin muffins. That's right. Just 2 ingredients. Here's one of the websites at which it can be found:

I made these muffins/cupcakes last weekend for Applebutter Fest. They were.......ok. I didn't really taste the pumpkin flavor. Even with the delicious cream cheese icing I added to them, they were still mediocre, at best.

Matt enjoyed them (really, he just enjoyed the icing), and asked me to try them again, maybe adding some pumpkin pie spice to them. So I once again purchased the classic yellow cake mix, and a can of pumpkin. I wandered over to the spice aisle. If you've ever had to purchase spices for a recipe, you know how expensive they are. I took one look at the prices, and decided to use what I had at home.

In addition to the cake mix and pumpkin, I added 1 tsp of allspice, 1 tsp of nutmeg, and 2 tsp of cinnamon. That's it. With what I added, this recipe is still one of the easiest I've ever done. The result? Delicious. Much more pumpkin-spice-ish. And that cream cheese icing.....Mmmmmmm.

I highly recommend!

The race is in 6 days! I'm excited. I'm not looking forward to having to run on the treadmill this week, since the highs are only in the 50's, but I gotta keep up my momentum.

Family Update

Again, it seems all I've been posting about lately has been running. Sorry. I know lots of people don't care about it like I do.

Matt and I celebrated our 4th wedding anniversary this past Thursday. Our lives have seriously been a whirlwind the whole 5 years we've been together! I wouldn't trade any of our adventures, though. He's such a great husband, daddy, and housemate. I'm quite a lucky woman.

Jameson has to have the sweetest personality on the face of this planet, which is saying something, based on his "personality" the first 3 months of his life. I seriously wouldn't wish colic on my worst enemy (I don't have any of those, do I?)! He just babbles and talks and coos almost the whole time he's awake and it's just too adorable for words! I've never heard a baby babble like him. I just LOVE to scoop him up and smoosh my lips into his FAT cheeks and kiss away!

Hendrix is well........being a typical (almost) 2 year old. Ha!! When he's in one of his moods, just watch out. His big thing right now is "No, I do it!" If Matt or I do something mundane, without giving it any thought - such as flipping a light switch, or closing the microwave door - Hendrix will sometimes just melt down into a huge tantrum that can last for 5 or 45 minutes. Yikes. We do our best to let him do a lot of stuff on his own. That being said, when Hendrix is in an agreeable mood, there's no one in the world I'd rather hang out with than him! He's talking like a champ, and it's just so fun and heartwarming to giggle and play games with him. He loves football right now, which is AWESOME! He's also doing GREAT with potty training. Other than bedtime, he's been in undies since Saturday morning, with only 2 accidents. I'm very proud of him, since he's not even two years old for another 6 weeks (6 weeks - that's all?!??).

We will be travelling to Indiana in two weeks to see Gigi (my mom's mom). We're quite excited to see her. We will also see Matt's family, of course. Matt's dad has just finished his 1st round of chemo/radiation and seems to be in pretty good spirits. All we can do is pray at this point.

Applebutter Fest was this weekend in Grand Rapids. It was crazy as usual. Starting now, I'm going to be focusing on building some inventory of hand-made items, with the hope of taking part in some craft shows in 2012. I just love making things, and hope I can sell some stuff to make a little bit of extra money. Wish me luck!

Applebutter Fest

It's that time of year again! As I sit and write this post, people are milling about outside, setting up their craft tents and food stands. We haven't been downtown yet this weekend, but I'm sure they've got the big applebutter kettle set up, ready for the festivities tomorrow morning.

It's one of our favorite weekends! Fall is - of course - my favorite time of year, and this festival just envelopes the season so perfectly. It's pretty warm this year. The high today and tomorrow is 83 degrees. But the trees are beautiful. There are bursts of red, yellow, and orange everywhere!

This year, we decided to stock up on groceries, and just stay home all weekend. We're grilling burgers and dogs tonight. Tomorrow, I'm trying a pinterest recipe I found for French Dip sandwiches, and making cheesy potatoes. Ohhhhh, it'll be so yummy! I'm also making pumpkin cupcakes and spinach artichoke dip. Delish.

This week - though I only was able to get outside once - was one of my best for total miles run. Since the weather is getting cooler, I can't take the boys out with me in the mornings, so I have to settle for the treadmill after work. But as long as I'm pushing myself in terms of my cardio, being healthy is being healthy, right?

After being on the treadmill all week, I was amazed at how much quicker the distance passes when you're running outside. My 2 miles today felt like it went by much faster than it does when I'm on a treadmill. I only have 2 more weekends to run outside before my 5k on the 23rd. Yikes! Gotta keep up a tough pace.
